I decided to go for barraumundi, which ended weighing 2kg but it was fine for 3 people for dinner plus left overs. A very easy dish to prepare, just make the sauce on the stove in a few mins then pour over the fish & bake. Towards the end you add the chilli & spring onion with heated oil poured over to crisp up the fish skin & veggies. Lining the pan with cabbage leaves is a great idea & next time I'll use them as a covering as well instead of foil. Make sure you have a dinner companion on who is good at removing the flesh from the bones!
I served this with sticky rice & Fried Broccoli & Kale with Garlic, Cumin & Lime.
