This has been such a fun project & made me realise just how many recipes I have in my collection of cookbooks & how few I've actually made. I am now committed to remedy that situation. I loved most ( but not all) of the dishes in Simple & have made repeats of some, even whilst I've been cooking up all the new ones. It's made me prepare ingredients I've not known much about or liked- anchovies, okra,C kale, celeriac, Brussel sprouts, black garlic & try techniques I usually couldn't be bothered with- uncooked cheesecakes, breadcrumbing fish or chicken plus made me try interesting & unusual combinations of ingredients for which Ottolenghi is famous- thyme in desserts. I've loved being able to use all the fresh herbs in my garden. I do think these recipes mostly meet the objective of being "simple" & encourage you to make any that appeal.
I've selected a favourite from each chapter.
Brunch- Pea, Za'atar & Feta Fritters.
Raw Veg- Tomato & Bread Salad with Anchovies & Capers
Cooked Veg- Mustardy Cauliflower Cheese ( close second has got to be the Harissa & Confit Garlic Roast Potatoes)
Rice, Grains & Pulses- Bulgur with Tomato, Aubergine & Lemon Yoghurt
Noodles & Pasta- Orzo with Prawns, Tomato & Marinated Feta
Meat- Chicken with Miso, Ginger & Lime
Fish- Bridget Jones's Pan- Fried Salmon with Pine Nut Salsa
Pudding- Mint & Pistachio Chocolate Fridge Cake
BUT there are so many great recipes & I'm sure if I were to create this list on another day, it could easily be quite different.
