Whole- roasted Celeriac with Coriander Seed Oil

This is a kinda interesting but weird entrée. It is indeed simple as all that is required is to rub oil & coriander seeds into the celeriac & then bake. The squeeze of lemon suggested in the recipe to serve added a nice tangy touch. Probably not a dish I would make again. Filed under category "made this cos I wanted to make everything in the book" rather than a recipe that looks immediately attractive & you want to make asap. This is why it is in my last 4 dishes to make. Good for vegans.
