What a fabulous idea! Loved this tangy blend of sweet juicy summer watermelon with tart granny smith apples and zesty lime overlaid with fresh mint & coriander & topped with toasted mustard seeds. Forgot to buy lemongrass so we left this out.
Indeed simple to prepare whilst the rest of the meal was in the oven.
Served as a meal with Spiced "Shepherd's Pie" with Butterbean crust and Sweet Potato Chips (both reviewed).
Remember to keep it simple. D
