A cold snap in the middle of summer called for a curry. Using the freshly harvested cherry tomatoes from the garden & the mint which is now pretty much a weed, this raita was the perfect accompaniment to a chicken curry. I didn't blitz the green chilli paste as much as the recipe probably required but loved the use of preserved lemons as the secret ingredient to give this dish extra tang. Would also work with middle eastern style mains- lamb? falafel? couscous?
