So they are

Short on time- a few minutes to peel & chop

Ingredients- all easy enough to find

Make ahead- we made on the day we ate them. They cooked in the oven at the same time as the Spiced "Shepherd's Pie"

Lazy- they are sooo easy

But also delicious. The cayenne adds a hit of spice, which could be omitted if you please. We left out the polenta

The chips were served as part of a summer meal with Spiced "Shepherd's Pie" with Butterbean Crust and Watermelon, Green Apple and Lime Salad.

A great combo. Light, refreshing & a hit- all eaten!!
