Stuffed Courgettes with Pine Nut Salsa

With everyday the garden bringing another zucchini (courgette) to be harvested, I have been making all the zucchini recipes in the book. Seems both Yotam & I love stuffed veggies. This recipe is no exception & another to add to the repertoire. A great vegetarian main with a stuffing that includes cherry tomatoes, breadcrumbs, lemon, oregano, parmesan & pine nuts.

I served it with the Couscous, Cherry Tomato & Herb salad.
