Still got loads of zucchini (courgettes) in the garden. Blink twice & they are twice as big! So I quickly harvested these smaller ones to make this veggie side dish to go with a lentil main. (See next post on Puy lentils with aubergines, tomatoes & yoghurt). I used my home chicken stock, which added to the overall flavour, which is subtle & delicious. A warning- they broke easily when I was taking them out of the baking dish so be careful if you want them to look intact & beautiful.
