I'm getting to the end of the project & making things that don't automatically sing to me as something I would normally like to make or eat. This dish is one of those & trusting my instincts, I would not have made it. I approached it with an open mind I hope but I did not like it. It was lovely fresh squid from the market, which I admit I have a bit of a fear about cooking as it can get tough & chewy pretty quickly which is exactly what happened. Not sure why it's necessary to cook it for 30 mins. Favourite Ottolenghi spices here of caraway & allspice seemed frankly weird. Uncharacteristically, there was some left over & no one wanted the leftovers for lunch the next day.
