Spring Roast Chicken with Preserved Lemon

The lemon seasoning was delicious & easy to prepare, make this roast chicken moist & flavoursome. I have never added a seasoning under the skin before like this but it was easy & satisfying to do it. It did take quite a bit longer than the 70 mins suggested in the recipe.
