Slow Cooked Lamb Shoulder with Mint & Cumin

This is a delicious main to cook on a cold day as it stays in the oven for 6 1/2 hours, leading to a warm kitchen & lovely smells. Even the veggies- carrot & celeriac are roasted for 4 hours. The overall dish is tender & succulent, the meat falling off the bone. The marinade adds additional interesting flavours with hints of mint, cumin, garlic & lemon. I've never cooked a lamb shoulder before but it'll be part of the repertoire now. Served with another Simple recipe-Spring Onion& Herb Salad & roasted potatoes.
