This is a great vegetarian main. The combo of pumpkin with lentils & cheese works really to make a solid winter dish. It's also got the very Ottolenghi addition of lots of fresh herbs; in this case it's sage, parsley, mint & tarragon. Again, I'm grateful for my herb garden with this project. I used Gorgonzola as the cheese. It melted deliciously over the top. The next day I decided to add chicken stock & blend it all into a soup. Also yummy.
