Roasted Aubergine with Anchovies & Oregano

Not a huge fan of anchovies but the challenge is to prepare all the recipes in the book, so it was time. So this is not really one I'd cook again as without the anchovies, it's really just roasted eggplant, although the oregano was a nice touch.
