Loved this! Looks & tastes great. A typical Simple recipe. Roast the eggplant, caramelise the onion, mix the yoghurt with the spices & almonds. Lovely at room temperature or warm.
This is the 70 recipe I've made in just over 5 months. I'm half way there! Yeah!
