Rice Noodle Salad with Cucumber and Poppy Seeds

This was the accompanying salad to the main course dish of Chicken with miso, ginger & lime. The noodles were cooked the day before. We have cucumbers growing in the garden so this was an added bonus especially as I forgot the apple. Particularly delicious was the pickled onion & ginger mix.
An easy to prepare summer salad with tangy Asian flavours.
