Puy Lentil & Aubergine Stew

Looks ugly, tastes good. It makes quite a lot so there was enough to have some the next day & it was even better. A great one pan winter dish that we served with meatballs green salad & crusty bread but could easily be a dish on its own. Confession- I used chicken stock & vermouth (no white wine in the house) & forgot the chilli flakes. Still really delicious!
