We've got snowpeas (mangetout) growing in the garden so this was a perfect quick & simple recipe to plan to cook after a day out. It's really like a pesto with pistachios except in the dish the nuts are roughly chopped & not all the basil is pulverised. I left out the anchovies (not a fan) & used Parmesan cheese instead of pecorino as it was what I had & I figure they are not that different. A simple easy to prepare pasta dish to add to the repertoire. Served with a mixed salad- basically whatever was in the fridge.
