Confession- never cooked with kale before. I have plenty of silver beet in the garden, so why bother? Well, this dish might be the answer. I had been warned that massaging kale works & yes, it does. The leaves were soft & delcious after a minute of massaging them with an oil, mustard & vinegar mix & then leaving them for a few hours. Add grilled asparagus, edamame, roasted seeds & mix. Simple.
I served this dish as part of a meal with lamb, potatoes & a tomato salad.
