
So, mackerel not to be found in the waters near where I live so the fishmonger suggested monkfish as a substitute. Coating the fish in cardamom was an easy way to add flavour. The salsa was delicious ( red chilli used here). Also no cream in the fridge so I used youghurt which was a light substitute & worked well. I grated the ginger into it, couldn't be bothered with collecting the juice, I figured it was the same flavour, so why make it harder than it needs to be?
A quick easy dish, good for a summer meal. I served with olive oil mash & buckwheat bean salad.
