Rule no. 1- always read the recipe before you start cooking. Which I thought I had done but I tried taking the meatloaf out of the tin before it was ready ie straight after it came out of the oven. Luckily enough of it was intact to get a reasonable photo. And after such careful preparation with a water bath in the oven. Nevertheless, even the pieces in crumbs were delicious especially because of the typical Ottolenghi spices - cumin & allspice as well as the tangy tahini sauce. It made enough for several meals, including microwaved 2 days later for lunch. This dish is quite "meaty" even with the addition of carrot & zucchini.
