Honey and Yoghurt Set Cheesecake

Page 280-281

This cheesecake is the best cheesecake I have ever tasted. All the ingredients worked together very well and it wasn't overbearingly sweet. The thyme on top of the cheesecake added an interesting savoury-ness to the cake. The yoghurt really balanced everything and surprisingly tasted delicious. The whole cake could really serve 10 people because everyone has such small pieces because it's quite rich but not overbearing.

The cheesecake had the letters I, M and E. I being 10 or less ingredients, M being make ahead and E being easier then you think. We made this before we even started to make the rest of dinner and we let it set in the fridge for around 4 hours until we wanted to eat it. It was a lot easier then I thought it would be to make because in the photos it looks very hard to re-create but I believe we almost spot on replicated what the photos look like and it tasted really good. It would be helpful if you had a food processor to crush the biscuits and a kitchen aid to mix the cream cheese and white chocolate. I would seriously suggest trying this out, it's delicious and easy

As always, remember to stay simple!
