I made this dish for my mum for lunch with the very last zucchini from summer's crop. My husband refuses to eat any more zucchini dishes as it has been a bumper year in the garden for zucchini & for a while there we had them every day. Luckily Ottolenghi has lots of ideas about how to use them, This is the last of the zucchini recipes in Simple that I still had to make & on a crisp autumn day it seemed like the perfect thing. Bonus is that my ageing mum has friends with special food needs for whom this dish would be perfect. She wanted the recipe. Gotta say it was easy & delicious. The veggies cook slowly whilst you make the porridge. Luckily I have a herb garden as Ottolenghi recipes frequently use them. This time it's tarragon (which I planted years ago after finding it hard & expensive to source) plus basil -the last of the summer crop still in the ground. Mum's garden had a lemon. I modified this recipe slightly to cater for my mum's taste so only 1 garlic clove ( not 5!) I could imagine this would be a great dish for kids too. You could add extra cheese on top &/or try it with other veggies- broad beans? capsicum? mushrooms? eggplant?
