Harissa & Manchego Omelette

I haven't made a regular omelette for years, if you could call this "regular". I tend to make Spanish style ones with lots of potatoes. This is more like making a pancake, the batter is quite thin & runny but full of Ottolenghi goodies like caramelised onion, rose harissa & fresh coriander. I've decided to always make extra onion & freeze it so I have some on hand. This omelette is topped with Manchego cheese, which I could not taste. A waste of a delicious cheese. Maybe next time I'll use feta. Nevertheless, it tasted good & is an easy brunch or quick meal.
