Harissa-Baked Potato Skins with Crispy Lettuce Salad.

This salad requires some preparation. You have to bake the potatoes, then remove the inside, add the harissa & continue to bake til the skins are crispy. I did this the day before I planned to prepare the salad. The use of tarragon & preserved lemon adds interest but overall it's really just a green salad with potato skins. I liked but not loved it, probably not one I'd make again.
