We decided to cook this with the Curried Egg & Cauliflower Salad as a family meal on a warm summer night. Great to cook with kids. An easy recipe to follow, good use of pantry ingredients, especially healthy ones like chick peas. It needed the lemon otherwise it might have been too bland as we left out the anchovies. Some people added Parmesan. We used a different type of pasta, following the "Simple" mantra of using what's in the pantry.
We found it hard to locate za'atar so we used a mix of oregano & sumac to season.
Method is sauteing onions & garlic then adding chickpeas, stock & spices. Finally you add spinach & parsley close to serving.
A green or tomato based salad would be a good accompaniment.
