This side dish was definitely a fan-favourite! Full of flavour and tasty ingredients, it wasn't a challenge to get it all eaten up. It was actually quite a rich tasting dish, so I recommend pairing it with another dish (I chose the chickpea and za'atar pasta!). We also discovered that a light drizzling on lemon on top enhances the flavour immensely, it lifts the entire meal. Overall, cooking the curried egg and cauliflower salad was a simple, quick and yummy meal, that can work for those vegetarian or otherwise!
Some personal changes to the meal were that we didn't include the tarragon or the chilli flakes, simply out of personal preference (and tarragon isn't the easiest ingredient to find!). These changes didn't affect the meal and it still tasted wonderful! We also used free-range, locally sourced eggs, which adds another level of deliciousness.
The actual cooking of the meal was incredibly easy. Really, you could boil it down into three simplified steps of:
1. Season and cook the cauliflower.
2. Hard boil the eggs.
3. Mix various ingredients together to create the dressing. (For the proper recipe, purchase the actual cookbook.)
And that was it! Super simple and not time consuming at all. The only thing you have to be careful of is making sure your cauliflower and eggs cook properly.
As i said, I made this salad in a meal with a chickpea pasta, another dish from 'Simple', but there is plenty more pairings you could work with! As it is quite a heavy dish, you would probably want something lighter.
I made this whole meal with my niece and nephew, so they were able to help me cut down the time everything took as well. My brother and his wife, as well as the three of us, all enjoyed our cooking immensely! I've penned a few comments below:
Absolutely delicious! The lemon really enhances it, and I'd say its one of the best cauliflower dishes I've ever had! 9/10

And my final statement about the dish: A great vegetarian main, and an excellent side with other dishes! To be enjoyed with the whole family. :)
