Crushed Courgettes

In an effort to finish the last of the garden's zucchinis & use up space in the oven whilst cooking the lamb meatloaf I gave this a try. Easy to prepare,It's quite subtle in flavour. Ottolenghi suggests serving with yoghurt. I'd add that next time.
