Courgette, Thyme & Walnut Salad

An easy interesting summer salad, good to use up those extra zucchinis in the garden if you grow them. I made the lemon, thyme oil in advance so the main job was using a potato peeler to get the zucchini strips and shelling some fresh walnuts. We had it with sausages for a BBQ.
