The zucchini harvest continues! Plus there's plenty of basil in the garden too. So even though it's blazing summer, I decided to have a go at a soup. How easy is this? Very. Chop the veggies, add stock & garlic, cook then blend. Simple. Topped off with feta & lemon, it made a lovely lunch with some toasted crunchy bread. PS I forgot the lemon.
