With so many zucchinis (courgettes) in the garden over summer & wanting a quick & easy meal after day out in the country, I found this delicious frittata just waiting to be made.
The recipe asks you to set the ciabatta, milk & cream aside for 30 mins. We couldn't wait so it was more like 10mins but that worked fine. Served with a green salad, this felt like a healthy but light summer meal.
It's in the Brunch chapter in the book but worked well for us for dinner, or could easily be a light lunch.
