Coconut-Crusted Fish Fingers

These were a little bit fiddly with a lot of coconut/panko crust ending up on the baking paper & not on the fish. I did sprinkle it on later with my fingers. The topping is delicious. I used flake as the fish, knowing that if would keep its shape when cut & cooked. The lime is a nice, refreshing touch. I served them with a leafy green salad. I imagine these would be great with kids & you could add other spices to adapt the recipe.
