With lots of fresh veggies in the garden, I decided to use a freshly picked cucumber to make this salad. I had to peel it as the skin was rather prickly. Tahini & za'atar add additional and delicious flavours to make this more than just chopped vegetables. I used red onion instead of spring onion. A glut of zucchinis (courgettes) also from the garden means I have been looking for recipes to use them so ended up making Turkey Burgers with Courgettes & Cumin with a Sumac Yoghurt Sauce (similar to one that goes with Lamb Pistachio Patties) from "Jerusalem" by Ottolenghi and Tamimi. A combo I can recommend.
