Cauliflower 'Tabbouleh'

This dish was as delicious as it looks. And so simple. I grated the cauliflower in the food processor then it's as easy as marinating in lemon juice then adding the obligatory fresh herbs. Top with pomegranate seeds & it's done. I served this as part of a meal with beetroot bread & a cavolo nero dish. I had some left over & it was just as good the next day.
