Butternut Squash with Sweetcorn Salsa, feta & Pumpkin Seeds

Char grilling corn was a new thing which I enjoyed doing & gave this dish a slightly smokey flavour. Otherwise it's typical Ottolenghi style roast veggies, in this case butternut pumpkin with herbs, feta, chilli & seeds. I served it with Lamb Arayes. Would work really well as part of a vegetarian banquet.
