This is so simple & delicious, a great cold weather dish with few ingredients that could become one of those things you make if there's hardly anything in the fridge. Hardly anything to do, not much more than cut up & cook the onions & mushrooms. Serve with a leafy green salad or another Ottolenghi veggie dish. I had it with Aubergine with Curried Yoghurt.
