Bridget Jones's Pan-fried Salmon with Pine Nut Salsa

p. 246

I love the intro to this recipe. Mentioned in movie "Bridget Jones's Baby" as what the love interest tells Bridget he would bring on an imaginary second date. No such dish existed so Ottolenghi created it.

What makes this dish so interesting is the salsa- a combo of celery, saffron, pine nuts, currants, capers, olives. lemon & parsley. It tasted fresh & summery ( even in the middle of winter). Looks impressive too, important for that date factor no doubt. But- it's very simple to make. I served it with Harissa & Confit Garlic Roast Potatoes & a green salad. A perfect combo.
