The first recipe in the book! And it certainly rings true to the idea of Simple. Just a matter of ensuring you have all the ingredients on hand. I substituted spinach for silver beet freshly picked from the garden. As a Sunday lunch & it was quick & easy to prepare- not that much longer than poached eggs on toast but so much more interesting.
