Beetroot, Caraway & Goat's Cheese Bread

Loved this! A fabulous combination of so many delicious ingredients- beetroot, goat's cheese ( full disclosure- I used feta), lots of different kinds of seeds plus ( like most Ottolenghi recipes) fresh herbs, in this case it's thyme ( luckily growing out of control in the garden). The beetroot gives this dish a lovely reddish colour along with big chunks of white cheese. It's more like a savoury cake than a bread.

I served it as part of a vegetarian meal with cauliflower tabbouleh & a cavolo nero dish. Would be fabulous with soup. Or as a breakfast with smashed avocado & poached egg. This is a definite favourite.
