I've been waiting for some juicy tomatoes to hit the shops but I had some friends over for a meal & this dish was going to play its part so I made it in spite of the not perfectly summery beef tomatoes. Nevertheless, it worked well. Looks great on the plate. Wonderful salsa with the green chilli & coriander giving it a kick. I grated the ginger rather than crushing. Served with lamb fillets, potatoes & kale.
