Avocado Butter on Toast with Tomato Salsa

Delicious & Simple! A lovely light summer lunch treat on a Sunday after a hard morning's tennis & 3 days of over 35 degrees. Using up the (almost) end of home grown tomatoes & with tarragon from the garden, this dish was an interesting twist on the ubiquitous "smashed avo" on toast. I especially loved the lime zest & juice which gave it a different tang to lemon. Add capers & you have an easily prepared treat. Whilst the recipe includes butter beaten into the avocado, if you are vegan, lactose intolerant, counting the calories or basically can't be stuffed: I'd feel free to omit. But, hey, I 'm not Yotam Ottolenghi, so you make up your own mind.
