This is so easy & extends the delicious avocado flavour into a bigger dish. I had plenty of broad beans in the garden so this is a lovely way of using them. We didn't eat it all in one sitting & it did keep fresh in the fridge for a day or so. I served it with other veggie delights to make a meal.
