My photo does not look anywhere near as delicious as the one in the book but it did taste delicious! The idea of adding aromatic flavours to the cooking water seems so obvious now I've tried it & I will continue to experiment with this idea. In this recipe, the potatoes are cooked with lemon, garlic, thyme & mint. Mashing them with olive oil & the cooking water is a great idea as it makes them less heavy & good for non dairy eaters. The topping contains the same ingredients along with olive oil. Overall it's a new but very simple variation on a common dish that can be easily changed & adapted according to what's in your garden & /or pantry.
