Arnold's Roast Chicken with Caraway & Cranberry Stuffing

Not sure what the problem is, maybe it's my oven but when I've followed the timing for the 2 roast chicken recipes in the book, both were under cooked & needed quite a bit more time in the oven. Nevertheless, once they were not so pink inside, the stuffing, which is the highlight of this dish, was delicious! There was quite a bit more on the side after the chicken was fully stuffed. The mix of cranberry, celery & chestnuts was so good. Fabulous texture. Of course it has loads of garlic, caraway & fresh parsley too. I served it with roasted cabbage & baked potatoes. A winner!
